SATE KAMBING

This is a very popular Indonesian dish and found in others countries, such as Malaysia and Singapore, in South East Asia.

You need....…

· 1 lb.. lamb meat

Marinade

· 2 tb oil

· clove crushed garlic

· medium onion, chopped

· 2 tsp lemon juice

· tb soy sauce

· salt & pepper

Cut lamb into small cubes and marinate. Drain and thread four or five pieces on to sate skewers. Cook over barbecue coals until brown on all sides (don't over cook). Serve with steamed rice and peanut sauce dipping the sate into the sauce. Additional garnish of cubed cucumber and onion makes for a delicious meal.

Peanut sauce

· 4 oz roasted unsalted peanuts with skins on

· tb brown sugar

· 2 cloves garlic

· medium onion, chopped

· 2 fresh red chilies

· cup coconut milk

· 2 tsp lemon juice

· 2 tsp soy sauce

· salt & pepper to taste

To make the sauce, grind peanuts with brown sugar, garlic, onion and chilies (this may be done in a food processor). Bring coconut milk to the boil, add remaining ingredients and simmer together for about 10 minutes, stirring often
